- 4 boneless skinless chicken breasts, pounded thin
- 1 cup freshly grated parmesan cheese
- 1 cup plain breadcrumbs
- 1/2 cup all purpose flour
- 2 large eggs, beaten
- 5 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup chicken broth
- 2 tablespoons butter
- 3 tablespoons olive oil
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Prepare three shallow bowls with flour, beaten eggs, and a mixture of breadcrumbs, parmesan cheese, salt, and black pepper.
- Heat olive oil in a large skillet over medium heat.
- Dredge each chicken breast in flour, dip into the eggs, then coat in the parmesan breadcrumb mixture.
- Cook the chicken for 4 to 5 minutes per side until golden brown and fully cooked. Remove and set aside.
- In the same skillet, melt butter and sauté garlic for 1 minute.
- Pour in chicken broth and heavy cream, then simmer for 3 to 4 minutes while stirring gently.
- Return the chicken to the skillet and spoon the creamy garlic sauce over the top.
- Garnish with chopped parsley and serve immediately.
Notes
- Freshly grated parmesan melts more smoothly and gives better flavor.
- Pound the chicken evenly for consistent cooking.
- Serve with pasta, mashed potatoes, or roasted vegetables.
- Add a splash of broth if the sauce becomes too thick.
