Description

Golden, crispy potato croquettes filled with a creamy, savory chicken mixture—perfect as a comforting appetizer or snack.


Ingredients

  • 3 large potatoes, peeled and boiled
  • 1 cup cooked chicken, shredded
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 1/2 cups breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Mash the boiled potatoes until smooth and let cool.
  2. In a bowl, mix shredded chicken, cream cheese, Parmesan cheese, green onions, garlic powder, salt, and pepper until well combined.
  3. Combine the chicken mixture with mashed potatoes until evenly mixed.
  4. Shape the mixture into small oval or cylindrical croquettes.
  5. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  6. Coat each croquette in flour, then dip in eggs, and finally coat with breadcrumbs.
  7. Heat vegetable oil in a deep pan to 350°F (175°C). Fry croquettes in batches until golden brown and crispy, about 3–4 minutes per side.
  8. Drain on paper towels and serve warm.

Notes

  • For extra flavor, add chopped herbs like parsley or thyme to the filling.
  • Use panko breadcrumbs for a crunchier texture.
