- 3 large potatoes, peeled and boiled
- 1 cup cooked chicken, shredded
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 1/2 cups breadcrumbs
- Vegetable oil for frying
Instructions
- Mash the boiled potatoes until smooth and let cool.
- In a bowl, mix shredded chicken, cream cheese, Parmesan cheese, green onions, garlic powder, salt, and pepper until well combined.
- Combine the chicken mixture with mashed potatoes until evenly mixed.
- Shape the mixture into small oval or cylindrical croquettes.
- Set up a breading station with flour, beaten eggs, and breadcrumbs.
- Coat each croquette in flour, then dip in eggs, and finally coat with breadcrumbs.
- Heat vegetable oil in a deep pan to 350°F (175°C). Fry croquettes in batches until golden brown and crispy, about 3–4 minutes per side.
- Drain on paper towels and serve warm.

- For extra flavor, add chopped herbs like parsley or thyme to the filling.
- Use panko breadcrumbs for a crunchier texture.
- Can be baked at 400°F (200°C) for 20 minutes as a healthier alternative.
