Instructions
- Heat a large pot over medium heat.
- Add olive oil, then sauté diced onion and minced garlic until soft and fragrant.
- Pour in chicken broth and bring to a gentle simmer.
- Add broken lasagna noodles and cook until tender.
- Stir in shredded chicken and fresh spinach, cooking until heated through.
