Description

This creamy and cheesy corn casserole is the ultimate comfort food, perfect for holidays or everyday dinners. With simple pantry ingredients and a golden crust, it’s sure to be a crowd favorite.


Ingredients

  • 1 can (15 oz) canned corn, drained
  • 1 can (15 oz) cream-style corn
  • 1 box (8.5 oz) cornbread mix
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine canned corn, cream-style corn, cornbread mix, sour cream, melted butter, shredded cheese, and eggs.
  3. Mix just until everything is incorporated. Do not overmix.
  4. Pour mixture into the prepared baking dish and smooth the top.
  5. Sprinkle extra cheese or parsley on top if desired.
  6. Bake uncovered for 45–50 minutes, or until the top is golden and the center is set.
  7. Let rest for 5–10 minutes before serving. Garnish with parsley if using.

Notes

  • Letting the casserole rest before serving makes it easier to slice.
  • You can add chopped jalapeños for a spicy twist.
  • Store leftovers in the fridge for up to 4 days or freeze individual portions.
