Description

Crispy on the outside and soft on the inside, these garlic butter smashed potatoes are rich, flavorful, and incredibly satisfying.


Ingredients

  • 1.5 pounds baby potatoes
  • 4 tablespoons unsalted butter, melted
  • 4 garlic cloves, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, combine melted butter and minced garlic, then set aside.
  3. Line a baking sheet with parchment paper or lightly grease it.
  4. Boil the baby potatoes in salted water for about 15 minutes until tender, then drain.
  5. Place the potatoes on the baking sheet and gently smash each one using a fork or potato masher.
  6. Drizzle olive oil over the smashed potatoes, then season with salt and black pepper.
  7. Roast in the oven for 20 to 25 minutes until crispy and golden.
  8. Remove from the oven and brush with the garlic butter mixture.
  9. Sprinkle with fresh parsley and serve immediately.
