- 1.5 pounds baby potatoes
- 4 tablespoons unsalted butter, melted
- 4 garlic cloves, minced
- 2 tablespoons fresh parsley, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, combine melted butter and minced garlic, then set aside.
- Line a baking sheet with parchment paper or lightly grease it.
- Boil the baby potatoes in salted water for about 15 minutes until tender, then drain.
- Place the potatoes on the baking sheet and gently smash each one using a fork or potato masher.
- Drizzle olive oil over the smashed potatoes, then season with salt and black pepper.
- Roast in the oven for 20 to 25 minutes until crispy and golden.
- Remove from the oven and brush with the garlic butter mixture.
- Sprinkle with fresh parsley and serve immediately.
