- 1 pound potato gnocchi
- 1 pound boneless skinless chicken, cut into bite-size pieces
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cups baby spinach
- 1 teaspoon Italian seasoning
- 3/4 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the chicken pieces with salt, black pepper, and Italian seasoning.
- Heat a large skillet over medium heat. Add the olive oil and 1 tablespoon of butter.
- Add the chicken and cook for 5 to 7 minutes, stirring occasionally, until golden and cooked through. Transfer the chicken to a plate.
- Add the remaining 1 tablespoon of butter to the skillet. Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Add the gnocchi and bring to a gentle simmer.
- Cook for 4 to 5 minutes, stirring occasionally, until the gnocchi is tender and the sauce begins to thicken.
- Return the chicken to the skillet. Stir in the Parmesan cheese until melted and smooth.
- Fold in the baby spinach and cook for 1 to 2 minutes until wilted.
- Taste and adjust seasoning if needed. Sprinkle with chopped parsley and serve hot.
Notes
- Freshly grated Parmesan melts more smoothly and gives the sauce the best texture.
- If the sauce thickens too much, stir in a splash of broth or cream before serving.
- Add a pinch of red pepper flakes if you want a little heat.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
