Description

Tender chicken, pillowy gnocchi, and spinach are folded into a creamy garlic Parmesan sauce for a cozy one-skillet dinner that feels rich, comforting, and weeknight-friendly.


Ingredients

  • 1 pound potato gnocchi
  • 1 pound boneless skinless chicken, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken pieces with salt, black pepper, and Italian seasoning.
  2. Heat a large skillet over medium heat. Add the olive oil and 1 tablespoon of butter.
  3. Add the chicken and cook for 5 to 7 minutes, stirring occasionally, until golden and cooked through. Transfer the chicken to a plate.
  4. Add the remaining 1 tablespoon of butter to the skillet. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Add the gnocchi and bring to a gentle simmer.
  6. Cook for 4 to 5 minutes, stirring occasionally, until the gnocchi is tender and the sauce begins to thicken.
  7. Return the chicken to the skillet. Stir in the Parmesan cheese until melted and smooth.
  8. Fold in the baby spinach and cook for 1 to 2 minutes until wilted.
  9. Taste and adjust seasoning if needed. Sprinkle with chopped parsley and serve hot.

Notes

  • Freshly grated Parmesan melts more smoothly and gives the sauce the best texture.
  • If the sauce thickens too much, stir in a splash of broth or cream before serving.
  • Add a pinch of red pepper flakes if you want a little heat.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
