- 2 cans (15 ounces each) chickpeas, drained and rinsed
- 1 can (14 ounces) diced tomatoes
- 1 can (14 ounces) coconut milk
- 1 cup vegetable broth
- 4 cups fresh spinach, roughly chopped

- 1/2 teaspoon black pepper
- 1 tablespoon lime juice
- 2 tablespoons fresh cilantro, chopped
- 4 cups cooked basmati rice
Instructions
- Heat a large skillet or Dutch oven over medium heat.
- Add olive oil, diced onion, garlic, and grated ginger. Cook for 4 to 5 minutes until softened and fragrant.
- Stir in curry powder, turmeric, and cumin. Cook for 1 minute while stirring constantly to toast the spices.
- Add chickpeas, diced tomatoes, coconut milk, vegetable broth, salt, and black pepper. Stir until fully combined.
- Bring the curry to a gentle simmer and cook uncovered for 15 minutes, stirring occasionally until slightly thickened.
- Stir in chopped spinach and lime juice. Cook for 2 to 3 minutes until the spinach wilts.
- Serve the curry over warm basmati rice and garnish with fresh cilantro.
