- 1 cup all purpose flour
- 1/2 cup almond flour
- 1 cup fresh blueberries
- 1/3 cup honey
- 1/2 cup plain Greek yogurt
- 2 large eggs
- 1 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil, melted
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a donut pan.
- In a mixing bowl whisk together the all purpose flour, almond flour, baking powder, and salt.
- In another bowl mix the honey, Greek yogurt, eggs, vanilla extract, and melted coconut oil until smooth.
- Gradually add the dry ingredients into the wet ingredients and mix gently until just combined.
- Fold in the fresh blueberries carefully so they stay whole.
- Spoon or pipe the batter into the prepared donut pan, filling each cavity about three quarters full.
- Bake for about 15 minutes or until the donuts are lightly golden and a toothpick inserted comes out clean.
- Allow the donuts to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Serve warm or at room temperature and enjoy.
Notes
- Toss blueberries lightly with flour before adding to the batter to keep them from sinking.
- Do not overmix the batter to keep the donuts soft and fluffy.
- If using frozen blueberries, add them directly without thawing.
- Store leftovers in an airtight container for up to 2 days at room temperature or 5 days in the refrigerator.
