Description

Soft, fluffy baked blueberry donuts made with wholesome ingredients and naturally sweet blueberries. These light and tender donuts are perfect for breakfast, brunch, or a healthier sweet treat.


Ingredients

  • 1 cup all purpose flour
  • 1/2 cup almond flour
  • 1 cup fresh blueberries
  • 1/3 cup honey
  • 1/2 cup plain Greek yogurt
  • 2 large eggs
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil, melted
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a donut pan.
  2. In a mixing bowl whisk together the all purpose flour, almond flour, baking powder, and salt.
  3. In another bowl mix the honey, Greek yogurt, eggs, vanilla extract, and melted coconut oil until smooth.
  4. Gradually add the dry ingredients into the wet ingredients and mix gently until just combined.
  5. Fold in the fresh blueberries carefully so they stay whole.
  6. Spoon or pipe the batter into the prepared donut pan, filling each cavity about three quarters full.
  7. Bake for about 15 minutes or until the donuts are lightly golden and a toothpick inserted comes out clean.
  8. Allow the donuts to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Serve warm or at room temperature and enjoy.

Notes

  • Toss blueberries lightly with flour before adding to the batter to keep them from sinking.
  • Do not overmix the batter to keep the donuts soft and fluffy.
  • If using frozen blueberries, add them directly without thawing.
  • Store leftovers in an airtight container for up to 2 days at room temperature or 5 days in the refrigerator.
