Description

  • 2 ½ cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup whole milk
  • 4 Earl Grey tea bags
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon culinary lavender, finely crushed
  • 4 cups powdered sugar
  • 3 tablespoons heavy cream
  • 8 ounces cream cheese, softened

Instructions

  1. Preheat the oven to 350°F. Grease and line two 8 inch cake pans with parchment paper.
  2. Warm the milk in a saucepan or microwave, then steep the Earl Grey tea bags in the warm milk for 10 minutes. Remove tea bags and let the milk cool slightly.
  3. In a medium bowl, whisk together the flour, baking powder, salt, and crushed culinary lavender.
  4. In a large mixing bowl, beat the softened butter and granulated sugar until pale and fluffy.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Alternate adding the dry ingredients and the Earl Grey infused milk into the butter mixture, mixing gently until just combined.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool completely on a wire rack.
  10. To make the frosting, beat the cream cheese, powdered sugar, softened butter, and heavy cream until smooth and fluffy.
  11. Spread frosting between the cake layers and over the top and sides of the cake.
  12. Garnish with a light sprinkle of dried lavender or Earl Grey tea leaves if desired, then slice and serve.
