Ingredients
Scale
- 2 ½ cups all purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup whole milk
- 4 Earl Grey tea bags
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon culinary lavender, finely crushed
- 4 cups powdered sugar
- 3 tablespoons heavy cream
- 8 ounces cream cheese, softened
Instructions
- Preheat the oven to 350°F. Grease and line two 8 inch cake pans with parchment paper.
- Warm the milk in a saucepan or microwave, then steep the Earl Grey tea bags in the warm milk for 10 minutes. Remove tea bags and let the milk cool slightly.
- In a medium bowl, whisk together the flour, baking powder, salt, and crushed culinary lavender.
- In a large mixing bowl, beat the softened butter and granulated sugar until pale and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Alternate adding the dry ingredients and the Earl Grey infused milk into the butter mixture, mixing gently until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool completely on a wire rack.
- To make the frosting, beat the cream cheese, powdered sugar, softened butter, and heavy cream until smooth and fluffy.
- Spread frosting between the cake layers and over the top and sides of the cake.
- Garnish with a light sprinkle of dried lavender or Earl Grey tea leaves if desired, then slice and serve.
Notes
- Use culinary grade lavender only for safe baking.
- Do not overmix the batter to keep the cake soft and fluffy.
- The cake tastes even better the next day as the tea flavors deepen.
- Store leftovers covered in the refrigerator for up to 4 days.
