- 1 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups powdered sugar
- 1/2 cup unsalted butter, softened (for filling)
Instructions
- Preheat oven to 180°C and line a baking sheet with parchment paper.
- In a bowl, mix flour, cocoa powder, baking soda, and salt. In another bowl, beat butter and sugar until creamy, then add egg and vanilla. Gradually combine with dry ingredients.
- Prepare baking tray with parchment paper.
- Roll dough and cut into small circles, placing evenly spaced on tray.
- Bake for 8 to 10 minutes until set.
- Cool completely. Mix powdered sugar with butter until smooth, spread onto one cookie and sandwich with another.
- Serve and enjoy.
Notes
- Use room temperature butter for best texture.
- Do not overbake to keep cookies slightly soft inside.
- Let cookies cool fully before adding filling.
