- 1 unbaked 9 inch pie crust
- 4 medium peaches, peeled and sliced
- 3 large eggs
- 1 cup whole milk
- 1/2 cup heavy cream
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- 1/2 teaspoon cinnamon
- 1 tablespoon butter, melted
- 1/4 teaspoon salt
Instructions
- Preheat oven to 375 degrees Fahrenheit and position the rack in the lower third of the oven.
- In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cornstarch, cinnamon, melted butter, and salt until smooth.
- Place the unbaked pie crust into a 9 inch pie dish and crimp the edges if desired.
- Arrange the sliced peaches evenly inside the pie crust.
- Slowly pour the custard mixture over the peaches.
- Bake for 45 to 50 minutes until the crust is golden and the center is slightly set.
- Cool the pie completely on a wire rack for at least 2 hours before slicing.
- Serve slightly chilled or at room temperature.
Notes
- Use ripe but firm peaches for the best texture.
- Cover the crust edges loosely with foil if they brown too quickly.
- The pie slices more cleanly after chilling.
- Store leftovers covered in the refrigerator for up to 4 days.
