- 8 ounces sliced mushrooms
- 1 medium yellow onion, finely chopped
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- Season the chicken thighs with salt and black pepper.
- In a bowl, whisk together the chicken broth, heavy cream, and Dijon mustard.
- Add butter to the skillet and cook the chicken thighs for 5 to 6 minutes per side until golden brown. Remove and set aside.
- Add the chopped onions and sliced mushrooms to the same skillet. Cook for 5 minutes until softened.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour the cream mixture into the skillet and stir gently.
- Return the chicken thighs to the skillet and simmer for 15 to 18 minutes until the sauce thickens and the chicken is fully cooked.
- Sprinkle fresh parsley over the top before serving.
- Serve hot with mashed potatoes, rice, pasta, or crusty bread.
