Description

Tender golden chicken thighs simmered in a rich and creamy mushroom sauce with garlic, onions, Dijon mustard, and fresh parsley. This cozy Irish-inspired comfort dish is hearty, savory, and perfect served with mashed potatoes, rice, or crusty bread.

  • 6 boneless skinless chicken thighs
  • 8 ounces sliced mushrooms
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large skillet over medium heat and add the olive oil.
  2. Season the chicken thighs with salt and black pepper.
  3. In a bowl, whisk together the chicken broth, heavy cream, and Dijon mustard.
  4. Add butter to the skillet and cook the chicken thighs for 5 to 6 minutes per side until golden brown. Remove and set aside.
  5. Add the chopped onions and sliced mushrooms to the same skillet. Cook for 5 minutes until softened.
  6. Stir in the minced garlic and cook for 1 minute until fragrant.
  7. Pour the cream mixture into the skillet and stir gently.
  8. Return the chicken thighs to the skillet and simmer for 15 to 18 minutes until the sauce thickens and the chicken is fully cooked.
  9. Sprinkle fresh parsley over the top before serving.
  10. Serve hot with mashed potatoes, rice, pasta, or crusty bread.

  • For a thicker sauce, simmer uncovered for a few extra minutes.
  • Fresh parsley adds the best flavor and color.
  • Do not boil the cream sauce aggressively to prevent separation.
