Description

Light and airy lemon cream puffs filled with a silky citrus cream and finished with a delicate dusting of powdered sugar. These bakery-style pastries are crisp on the outside, creamy on the inside, and packed with bright fresh lemon flavor.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar for dusting

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine water, butter, and salt. Bring to a gentle boil over medium heat.
  3. Add the flour all at once and stir continuously until the dough forms a smooth ball and pulls away from the sides of the pan.
  4. Remove the dough from heat and let it cool for about 5 minutes.
  5. Add the eggs one at a time, mixing thoroughly after each addition until the dough becomes glossy and smooth.
  6. Transfer the dough to a piping bag and pipe small mounds onto the prepared baking sheet.
  7. Bake for 30 minutes or until golden brown and puffed.
  8. Allow the pastry shells to cool completely.
  9. In a mixing bowl, beat heavy cream, cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth and fluffy.
  10. Pipe the lemon cream filling into the cooled pastry shells.
  11. Dust the tops with powdered sugar before serving.

Notes

  • Fresh lemon juice gives the brightest flavor.
  • Do not open the oven during baking or the puffs may collapse.
  • Allow the shells to cool completely before filling.
  • The filling can be made a day ahead and refrigerated.
