- 1 cup water
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup heavy cream
- 4 ounces cream cheese, softened
- 1 cup powdered sugar
- 3 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar for dusting
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a medium saucepan, combine water, butter, and salt. Bring to a gentle boil over medium heat.
- Add the flour all at once and stir continuously until the dough forms a smooth ball and pulls away from the sides of the pan.
- Remove the dough from heat and let it cool for about 5 minutes.
- Add the eggs one at a time, mixing thoroughly after each addition until the dough becomes glossy and smooth.
- Transfer the dough to a piping bag and pipe small mounds onto the prepared baking sheet.
- Bake for 30 minutes or until golden brown and puffed.
- Allow the pastry shells to cool completely.
- In a mixing bowl, beat heavy cream, cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth and fluffy.
- Pipe the lemon cream filling into the cooled pastry shells.
- Dust the tops with powdered sugar before serving.
Notes
- Fresh lemon juice gives the brightest flavor.
- Do not open the oven during baking or the puffs may collapse.
- Allow the shells to cool completely before filling.
- The filling can be made a day ahead and refrigerated.
