- 1 pound boneless skinless chicken thighs, cut into bite-size pieces
- 3 packs instant ramen noodles, seasoning packets discarded
- 1/2 cup sun dried tomatoes in oil, drained and chopped
- 1 tablespoon oil from the sun dried tomato jar
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 3/4 cup freshly grated parmesan cheese
- 2 cups baby spinach
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt, plus more to taste
- 2 tablespoons fresh basil or parsley, chopped
Instructions
- Warm a large skillet or deep saucepan over medium heat for 1 to 2 minutes.
- Add the sun dried tomato oil and butter. Once melted, stir in the chicken, salt, black pepper, Italian seasoning, and crushed red pepper flakes.
- Cook for 5 to 6 minutes, stirring often, until the chicken is mostly cooked and lightly golden.
- Stir in the garlic and chopped sun dried tomatoes. Cook for 1 minute, just until fragrant.
- Pour in the chicken broth and bring it to a gentle simmer.
- Add the ramen noodles and loosen them with tongs as they soften. Cook for 3 to 4 minutes, until tender but still springy.
- Reduce the heat to medium-low, then stir in the heavy cream, parmesan cheese, and baby spinach.
- Cook gently until the spinach wilts and the broth turns creamy.
- Taste and adjust with more salt or pepper if needed. Add a splash of broth if the sauce is too thick.
- Serve hot with chopped basil or parsley, extra parmesan, and red pepper flakes if desired.
Notes
- Use freshly grated parmesan for the smoothest sauce.
- Do not overcook the ramen because it will keep softening in the hot broth.
- Add parmesan over medium-low heat to prevent clumping.
- For leftovers, reheat with a splash of chicken broth to loosen the sauce.
