Description

A creamy, cozy ramen bowl made with tender chicken, sun dried tomatoes, garlic, parmesan, spinach, and a silky tomato cream broth.


Ingredients

  • 1 pound boneless skinless chicken thighs, cut into bite-size pieces
  • 3 packs instant ramen noodles, seasoning packets discarded
  • 1/2 cup sun dried tomatoes in oil, drained and chopped
  • 1 tablespoon oil from the sun dried tomato jar
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 3/4 cup freshly grated parmesan cheese
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt, plus more to taste
  • 2 tablespoons fresh basil or parsley, chopped

Instructions

  1. Warm a large skillet or deep saucepan over medium heat for 1 to 2 minutes.
  2. Add the sun dried tomato oil and butter. Once melted, stir in the chicken, salt, black pepper, Italian seasoning, and crushed red pepper flakes.
  3. Cook for 5 to 6 minutes, stirring often, until the chicken is mostly cooked and lightly golden.
  4. Stir in the garlic and chopped sun dried tomatoes. Cook for 1 minute, just until fragrant.
  5. Pour in the chicken broth and bring it to a gentle simmer.
  6. Add the ramen noodles and loosen them with tongs as they soften. Cook for 3 to 4 minutes, until tender but still springy.
  7. Reduce the heat to medium-low, then stir in the heavy cream, parmesan cheese, and baby spinach.
  8. Cook gently until the spinach wilts and the broth turns creamy.
  9. Taste and adjust with more salt or pepper if needed. Add a splash of broth if the sauce is too thick.
  10. Serve hot with chopped basil or parsley, extra parmesan, and red pepper flakes if desired.

Notes

  • Use freshly grated parmesan for the smoothest sauce.
  • Do not overcook the ramen because it will keep softening in the hot broth.
  • Add parmesan over medium-low heat to prevent clumping.
  • For leftovers, reheat with a splash of chicken broth to loosen the sauce.
