Description

Neon Blast Jolly Rancher Candy Apples are glossy, jewel-toned apples coated in melted Jolly Rancher candy for a bright, crunchy, nostalgic treat that’s perfect for parties and celebrations.


Ingredients

  • 6 medium apples (Granny Smith or Honeycrisp)
  • 2 cups assorted Jolly Ranchers (about 40 candies)
  • 1/2 cup light corn syrup
  • 1 cup granulated sugar
  • 1/4 cup water
  • 6 lollipop or wooden sticks
  • Light cooking spray, for gloss (optional)

Instructions

  1. Prepare a baking sheet lined with a silicone baking mat or parchment paper and insert a lollipop or wooden stick firmly into the top of each apple.
  2. Wash and thoroughly dry the apples, removing any stems and ensuring no moisture remains on the skin.
  3. In a heavy saucepan combine 2 cups assorted Jolly Ranchers, 1 cup granulated sugar, 1/2 cup light corn syrup, and 1/4 cup water. Stir gently to combine.
  4. Heat the mixture over medium heat, stirring occasionally, until the candies melt and the sugar dissolves fully.
  5. Attach a candy thermometer to the saucepan and bring the mixture to the hard crack stage, about 300°F (149°C). Monitor closely to avoid burning.
  6. Once the mixture reaches temperature, remove from heat and work quickly. Tilt the pan and dip each prepared apple into the molten candy, twisting to coat evenly and allowing excess to drip back into the pan.
  7. Place dipped apples on the prepared baking sheet to set. If desired, spray a very light mist of cooking spray after the candy sets for extra gloss.
  8. Allow apples to cool completely at room temperature until the candy shell hardens, then serve and enjoy.
