Description

A bright and comforting one-pan dish featuring tender salmon fillets cooked alongside creamy lemon-infused orzo, finished with parmesan and fresh herbs.


Ingredients

  • 4 salmon fillets (about 150 grams each)
  • 1 cup orzo pasta
  • 1 lemon, juiced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Season the salmon with salt and pepper, then prepare garlic and lemon juice.
  3. Sear the salmon for about 3 minutes per side until lightly golden, then remove and set aside.
  4. In the same skillet, sauté garlic briefly, then add orzo and stir for 1 minute before pouring in chicken broth and lemon juice.
  5. Let the orzo simmer for about 10 minutes, then return the salmon to the skillet and cook for another 5 minutes until everything is tender.
  6. Stir in butter and parmesan until creamy, then sprinkle fresh parsley on top.
  7. Serve warm straight from the skillet with extra lemon if desired.

Notes

  • Use fresh lemon juice for the best flavor
  • Do not overcook the salmon to keep it tender
  • Add a splash of broth when reheating to restore creaminess
