Ingredients
Scale
- 4 salmon fillets (about 150 grams each)
- 1 cup orzo pasta
- 1 lemon, juiced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/4 cup grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Season the salmon with salt and pepper, then prepare garlic and lemon juice.
- Sear the salmon for about 3 minutes per side until lightly golden, then remove and set aside.
- In the same skillet, sauté garlic briefly, then add orzo and stir for 1 minute before pouring in chicken broth and lemon juice.
- Let the orzo simmer for about 10 minutes, then return the salmon to the skillet and cook for another 5 minutes until everything is tender.
- Stir in butter and parmesan until creamy, then sprinkle fresh parsley on top.
- Serve warm straight from the skillet with extra lemon if desired.
Notes
- Use fresh lemon juice for the best flavor
- Do not overcook the salmon to keep it tender
- Add a splash of broth when reheating to restore creaminess
