Description

A refreshing chilled dessert made with juicy peaches, chewy sago pearls, creamy coconut milk, and silky jelly layers. This Peach Sago Jelly Cake is light, fruity, creamy, and perfect for warm days or elegant celebrations.


Ingredients

  • 3 large ripe peaches, peeled and diced
  • 1 cup diced mango
  • 1/2 cup small sago pearls
  • 2 cups coconut milk
  • 1 cup whole milk
  • 1/2 cup sugar
  • 3 tablespoons unflavored gelatin powder
  • 1/2 cup cold water
  • 1 cup prepared peach jelly cubes
  • 1 teaspoon vanilla extract
  • 1 small pinch salt

Instructions

  1. Lightly grease a 7 inch cake mold or glass dish with neutral oil.
  2. Bring water to a boil and cook the sago pearls for about 12 minutes until mostly translucent. Drain and rinse with cold water.
  3. In a saucepan, combine coconut milk, whole milk, sugar, vanilla extract, and salt. Heat gently while stirring until the sugar fully dissolves.
  4. Bloom the gelatin powder in cold water for 5 minutes.
  5. Stir the bloomed gelatin into the warm milk mixture until completely dissolved and smooth.
  6. Add diced peaches, mango chunks, cooked sago pearls, and peach jelly cubes into the prepared mold.
  7. Pour the creamy jelly mixture evenly over the fruit and sago mixture.
  8. Transfer the mold carefully to the refrigerator and chill for at least 6 hours or until fully set.
  9. Run a knife gently around the edges before unmolding.
  10. Slice and serve chilled.

Notes

  • Use ripe peaches for the best natural sweetness and aroma.
  • Rinse the cooked sago pearls well to prevent sticking.
  • Allow the jelly mixture to cool slightly before pouring so the fruit stays evenly distributed.
  • For cleaner slices, dip the knife in warm water before cutting.
