A cozy twist on a British classic, this Pigs in Blankets Toad in the Hole combines crispy bacon-wrapped sausages with fluffy Yorkshire pudding for the ultimate comfort dish.

- 8 thick pork sausages
- 8 slices streaky bacon
- 140g plain flour
- 4 large eggs
- 200ml whole milk
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 220°C (200°C fan) or 425°F. Place your roasting dish in the oven with the oil to heat up.
- In a bowl, whisk together the flour, eggs, milk, and salt until smooth. Let the batter rest for 30 minutes.
- Carefully remove the hot roasting dish from the oven.
- Wrap each sausage in a slice of bacon to form pigs in blankets. Arrange them evenly in the hot oil.
- Roast for 15 minutes until the bacon starts to crisp.
- Pour the rested batter over the sausages and return to the oven.
- Bake for another 25–30 minutes until puffed and golden.
- Let it sit for a couple of minutes before slicing and serving hot.
Notes
- Make sure the oil is very hot before adding the batter for the best rise.
- Do not open the oven during baking or the batter may deflate.
- Resting the batter helps it rise and creates a better texture.
- Use high-quality sausages for maximum flavor.
