- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 1 medium green bell pepper, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) tomato sauce
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons sliced green onions
- 2 tablespoons chopped fresh cilantro
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add diced onion and green bell pepper. Cook for 4 to 5 minutes until softened.
- Stir in minced garlic and cook for 30 seconds.
- Add ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess grease if needed.
- Stir in tomato paste, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute.
- Add diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth. Stir well.
- Bring the chili to a gentle simmer and cook uncovered for 25 minutes, stirring occasionally.
- Taste and adjust seasoning if needed.
- Serve hot topped with shredded cheddar cheese, sour cream, green onions, and fresh cilantro.
Notes
- For a thicker chili, simmer uncovered for a few extra minutes.
- This chili tastes even better the next day after the flavors blend together.
- Add diced jalapeños or cayenne pepper for extra heat.
