Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons sliced green onions
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add diced onion and green bell pepper. Cook for 4 to 5 minutes until softened.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess grease if needed.
  5. Stir in tomato paste, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute.
  6. Add diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth. Stir well.
  7. Bring the chili to a gentle simmer and cook uncovered for 25 minutes, stirring occasionally.
  8. Taste and adjust seasoning if needed.
  9. Serve hot topped with shredded cheddar cheese, sour cream, green onions, and fresh cilantro.

Notes

  • For a thicker chili, simmer uncovered for a few extra minutes.
  • This chili tastes even better the next day after the flavors blend together.
  • Add diced jalapeños or cayenne pepper for extra heat.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
