Description

A golden, flaky pastry filled with a savory mix of sautéed vegetables and creamy feta cheese, baked to perfection for a comforting and satisfying dish.


Ingredients

  • 1 sheet puff pastry, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup carrots, grated
  • 1 cup bell peppers, sliced
  • 1 medium onion, finely chopped
  • 2 tablespoons olive oil
  • 1 cup feta cheese, crumbled
  • 1 large egg, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 200°C and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet and sauté onion, mushrooms, carrots, and bell peppers until softened. Add spinach and cook until wilted. Season with salt and pepper, then let cool slightly and mix in feta cheese.
  3. Roll out puff pastry on a flat surface.
  4. Spread the vegetable mixture along one side, then roll into a log and seal edges.
  5. Place seam-side down on baking sheet, brush with egg, and bake for 25 minutes until golden.
  6. Let rest a few minutes before slicing.
  7. Serve warm and enjoy.
