  • 2 cups fresh spinach leaves
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 cup grated cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried herbs

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet.
  2. Heat olive oil in a skillet, sauté onion and garlic until fragrant, then add mushrooms, bell peppers, and spinach. Cook until softened and moisture is reduced. Stir in salt, pepper, dried herbs, and cheese.
  3. Roll out the puff pastry on a clean surface.
  4. Spread the vegetable mixture evenly along one side of the pastry, then roll it into a log and seal the edges.
  5. Place on the baking sheet, brush with olive oil, and bake for 25 minutes until golden and crisp.
  6. Let it rest for a few minutes before slicing.
