Description

A vibrant and satisfying Southwest Fiesta bowl packed with seasoned chicken, fluffy rice, fresh vegetables, and zesty lime for a bold and balanced meal.


Ingredients

  • 2 cups cooked and sliced chicken breast
  • 2 cups cooked white rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 large avocado, sliced
  • 1 cup shredded lettuce
  • 1 cup shredded cheese
  • 1 whole lime, cut into halves
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat your skillet over medium heat.
  2. Season the cooked chicken with salt, pepper, and a squeeze of lime juice.
  3. Warm the rice in a saucepan until hot and fluffy.
  4. Warm the black beans and corn slightly in a pan or microwave.
