Description

A quick and flavorful spicy zucchini stir fry coated in a savory garlic chili sauce, perfect as a side or light main dish.


Ingredients

  • 4 medium zucchini, sliced into rounds
  • 4 garlic cloves, minced
  • 3 tablespoons soy sauce
  • 1 teaspoon chili flakes
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Heat a large skillet or wok over medium-high heat.
  2. In a bowl, mix soy sauce, chili flakes, sugar, and cornstarch slurry.
  3. Add vegetable oil to the pan and let it heat up.
  4. Add minced garlic and sauté briefly until fragrant.
  5. Add zucchini slices and stir fry for 5 to 7 minutes until slightly tender with light browning.
  6. Pour in the sauce and stir well until it thickens and coats the zucchini.
  7. Add sesame oil and chopped green onions, then mix.
  8. Garnish with sesame seeds and serve immediately.

Notes

  • Do not overcook zucchini to avoid mushy texture
  • Cook on medium-high heat for better caramelization
  • Add sesame oil at the end for best flavor
