Description

Juicy grilled chicken skewers coated in a sweet and spicy honey lime glaze with smoky charred edges and fresh citrus flavor. Perfect for quick dinners, summer cookouts, or meal prep.

  • 2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup honey
  • 1/4 cup freshly squeezed lime juice
  • 1 teaspoon lime zest
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red chili flakes
  • 1 teaspoon smoked paprika
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped cilantro
  • 1 sliced lime for serving

Instructions

  1. Preheat a grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 20 minutes beforehand.
  2. In a large bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, chili flakes, smoked paprika, soy sauce, salt, and black pepper.
  3. Lightly oil the grill grates or grill pan to prevent sticking.
  4. Add the chicken pieces to the marinade and toss until evenly coated. Thread the chicken onto skewers.
  5. Grill the skewers for 10 to 12 minutes, turning occasionally until the chicken is fully cooked and lightly charred.
  6. Brush the skewers with remaining glaze during the final minutes of cooking for extra flavor and shine.
  7. Garnish with chopped cilantro and serve with fresh lime wedges.

Notes

  • Chicken thighs stay juicier than chicken breast during grilling.
  • Fresh lime juice gives the best flavor and brightness.
  • Do not cook over extremely high heat because the honey can burn quickly.
