- 2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
- 1/4 cup honey
- 1/4 cup freshly squeezed lime juice
- 1 teaspoon lime zest
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red chili flakes
- 1 teaspoon smoked paprika
- 2 tablespoons soy sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped cilantro
- 1 sliced lime for serving
Instructions
- Preheat a grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 20 minutes beforehand.
- In a large bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, chili flakes, smoked paprika, soy sauce, salt, and black pepper.
- Lightly oil the grill grates or grill pan to prevent sticking.
- Add the chicken pieces to the marinade and toss until evenly coated. Thread the chicken onto skewers.
- Grill the skewers for 10 to 12 minutes, turning occasionally until the chicken is fully cooked and lightly charred.
- Brush the skewers with remaining glaze during the final minutes of cooking for extra flavor and shine.
- Garnish with chopped cilantro and serve with fresh lime wedges.

- Chicken thighs stay juicier than chicken breast during grilling.
