- 1 ½ pounds boneless skinless chicken thighs, cut into bite-sized pieces
- 1 ½ cups uncooked long grain white rice
- 6 tablespoons butter
- 1 cup heavy cream
- 1 cup tomato sauce
- 3 cups chicken broth
- 1 medium onion, finely chopped
- 4 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- ½ teaspoon turmeric
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large deep skillet over medium heat and melt 2 tablespoons of butter.
- Season the chicken pieces with salt, black pepper, paprika, cumin, and turmeric.
- Add the chopped onion to the skillet and cook for 3 minutes until softened. Stir in the garlic and cook for 30 seconds.
- Add the seasoned chicken and cook until lightly browned.
- Stir in the rice, tomato sauce, and chicken broth until well combined.
- Bring to a gentle simmer, cover, and cook for 18 to 20 minutes until the rice is tender and the liquid is mostly absorbed.
- Stir in the remaining butter and heavy cream. Cook uncovered for 2 to 3 minutes until creamy.
- Sprinkle with fresh parsley and serve warm.
