- 1 cup dry quinoa
- 2 cups almond milk
- 1 cup fresh strawberries, sliced
- 1/4 cup slivered almonds
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Rinse quinoa thoroughly under cold water using a fine mesh sieve.
- In a medium saucepan, combine quinoa, almond milk, vanilla extract, cinnamon, and a pinch of salt. Bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy and liquid is absorbed.
- Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
- Stir in honey and most of the sliced strawberries.
- Spoon into bowls and top with remaining strawberries and slivered almonds.
- Drizzle with extra honey if desired and serve warm or chilled.
Notes
- Use pre-sliced almonds or toast them for extra crunch and flavor.
- Swap in any seasonal fruits like blueberries or peaches.
