Description

Sweet Strawberry Shortcake Cheesecake Rolls are soft and fluffy rolls filled with a luscious strawberry cheesecake mixture, topped with a buttery crumb topping and drizzled with sweet glaze. They’re the perfect blend of classic shortcake flavor and creamy indulgence.


Ingredients

  • 1 can (13.8 oz) refrigerated pizza dough or crescent roll sheet
  • 1 cup fresh strawberries, finely chopped
  • 4 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup crushed shortbread cookies or vanilla wafers
  • 2 tablespoons melted butter
  • 1/4 cup powdered sugar
  • 12 teaspoons milk (for glaze)
  • Extra strawberries or cookie crumbs for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a baking pan with parchment paper.
  2. In a small bowl, mix softened cream cheese, granulated sugar, and vanilla extract until smooth.
  3. Unroll dough onto a lightly floured surface. Spread cream cheese mixture evenly over the dough, leaving a small border around the edges.
  4. Sprinkle chopped strawberries evenly over the cream cheese layer.
  5. Carefully roll up the dough jelly-roll style and slice into 8–10 even pieces.
  6. Place rolls in prepared pan, leaving slight space between each.
  7. In a small bowl, mix crushed cookies and melted butter. Sprinkle over the tops of the rolls.
  8. Bake for 18–22 minutes or until golden brown and bubbly.
  9. While rolls are baking, whisk together powdered sugar and milk until smooth to make glaze.
  10. Let rolls cool slightly, then drizzle with glaze. Garnish with extra strawberries or crumbs if desired. Serve warm or at room temperature.

Notes

  • Use strawberry preserves if fresh strawberries aren’t available.
  • Chill the dough slightly before slicing to make cleaner cuts.
  • Store leftovers in the fridge and reheat gently before serving.
