Description

Creamy taco pasta loaded with seasoned ground beef, black beans, corn, cheddar cheese, and rotini pasta in a rich Tex-Mex inspired sauce. This comforting one-pan dinner is hearty, cheesy, and perfect for busy weeknights.


Ingredients

  • 12 ounces rotini pasta
  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 can (10 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup beef broth
  • 1 cup heavy cream
  • 2 cups cheddar cheese, freshly shredded
  • 1/2 cup sour cream
  • 2 tablespoons chopped cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3 minutes until softened. Stir in minced garlic and cook for 30 seconds.
  3. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess grease if needed.
  4. Stir in taco seasoning, diced tomatoes, black beans, corn, beef broth, salt, and black pepper. Mix well.
  5. Reduce heat slightly and pour in the heavy cream. Simmer for 5 minutes.
  6. Add the cooked pasta and shredded cheddar cheese. Stir until the cheese melts completely and the sauce becomes creamy.
  7. Remove from heat and stir in sour cream until smooth.
  8. Top with chopped cilantro and serve warm.

Notes

  • Freshly shredded cheese melts smoother than pre-shredded cheese.
  • Add a splash of broth or milk when reheating leftovers to keep the sauce creamy.
  • Ground turkey or chicken can be substituted for ground beef.
  • For extra spice, add diced jalapeños or hot sauce.
