Description
Creamy taco pasta loaded with seasoned ground beef, black beans, corn, cheddar cheese, and rotini pasta in a rich Tex-Mex inspired sauce. This comforting one-pan dinner is hearty, cheesy, and perfect for busy weeknights.

- 12 ounces rotini pasta
- 1 pound lean ground beef
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 2 tablespoons taco seasoning
- 1 can (10 ounces) diced tomatoes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup beef broth
- 1 cup heavy cream
- 2 cups cheddar cheese, freshly shredded
- 1/2 cup sour cream
- 2 tablespoons chopped cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3 minutes until softened. Stir in minced garlic and cook for 30 seconds.
- Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess grease if needed.
- Stir in taco seasoning, diced tomatoes, black beans, corn, beef broth, salt, and black pepper. Mix well.
- Reduce heat slightly and pour in the heavy cream. Simmer for 5 minutes.
- Add the cooked pasta and shredded cheddar cheese. Stir until the cheese melts completely and the sauce becomes creamy.
- Remove from heat and stir in sour cream until smooth.
- Top with chopped cilantro and serve warm.
Notes
- Freshly shredded cheese melts smoother than pre-shredded cheese.
- Add a splash of broth or milk when reheating leftovers to keep the sauce creamy.
- Ground turkey or chicken can be substituted for ground beef.
- For extra spice, add diced jalapeños or hot sauce.
