Description

A fresh and vibrant quinoa salad packed with crisp vegetables, creamy feta, and a bright lemon dressing. Perfect for a light meal or a flavorful side.


Ingredients

  • 1 cup quinoa (uncooked)
  • 2 cups water
  • 1 cup cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup bell pepper (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1/2 cup feta cheese (crumbled)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse the quinoa thoroughly under cold water using a fine mesh strainer.
  2. Bring 2 cups of water to a boil in a medium saucepan, then add the quinoa.
  3. Reduce heat, cover, and let simmer for about 15 minutes until the quinoa is tender and the water is absorbed.
  4. Remove from heat and let the quinoa cool completely.
  5. In a large mixing bowl, combine the cooled quinoa, cucumber, cherry tomatoes, bell pepper, red onion, parsley, and feta cheese.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  7. Pour the dressing over the salad and toss gently until everything is evenly coated.
  8. Taste and adjust seasoning if needed, then serve immediately or chill before serving.
