- 4 cups green cabbage, thinly sliced
- 2 medium carrots, julienned
- 1 large cucumber, thinly sliced
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro, chopped
- 1/3 cup roasted peanuts, chopped
- 1/4 cup fresh lime juice
- 2 tablespoons fish sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon red chili flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a small bowl, whisk together lime juice, fish sauce, honey, rice vinegar, sesame oil, chili flakes, salt, and black pepper.
- Place shredded chicken, cabbage, carrots, and cucumber into a large mixing bowl.
- Add mint, cilantro, and chopped peanuts.
- Pour dressing over the salad gradually and toss gently until evenly coated.
- Taste and adjust seasoning if needed.
- Serve immediately while fresh and crunchy.

- Keep dressing separate until serving for maximum crunch.
- Add peanuts right before serving to keep them crisp.
