Description

A fresh and vibrant Vietnamese chicken salad packed with crunchy cabbage, shredded chicken, herbs, peanuts, and a tangy lime dressing.


Ingredients

  • 3 cups cooked shredded chicken
  • 4 cups green cabbage, thinly sliced
  • 2 medium carrots, julienned
  • 1 large cucumber, thinly sliced
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro, chopped
  • 1/3 cup roasted peanuts, chopped
  • 1/4 cup fresh lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a small bowl, whisk together lime juice, fish sauce, honey, rice vinegar, sesame oil, chili flakes, salt, and black pepper.
  2. Place shredded chicken, cabbage, carrots, and cucumber into a large mixing bowl.
  3. Add mint, cilantro, and chopped peanuts.
  4. Pour dressing over the salad gradually and toss gently until evenly coated.
  5. Taste and adjust seasoning if needed.
  6. Serve immediately while fresh and crunchy.

  • Keep dressing separate until serving for maximum crunch.
  • Add peanuts right before serving to keep them crisp.
