Ingredients

- 400 grams wild mushrooms, sliced
- 2 medium yellow onions, thinly sliced
- 2 cups fresh kale, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme leaves
Instructions
- Heat a large pot over medium heat.
- Add olive oil and sliced onions, cook slowly while stirring until golden and soft.
- Add sliced mushrooms and cook until they release moisture and begin to brown.
- Stir in garlic and thyme, then pour in the vegetable broth.
- Bring to a gentle simmer and cook for 20 minutes.
- Add chopped kale, salt, and black pepper, cook for another 5 to 7 minutes.
- Ladle into bowls and serve warm.
