Description

A comforting and earthy soup made with wild mushrooms, sweet caramelized onions, and fresh kale simmered in a flavorful broth.


Ingredients

Scale
  • 400 grams wild mushrooms, sliced
  • 2 medium yellow onions, thinly sliced
  • 2 cups fresh kale, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Heat a large pot over medium heat.
  2. Add olive oil and sliced onions, cook slowly while stirring until golden and soft.
  3. Add sliced mushrooms and cook until they release moisture and begin to brown.
  4. Stir in garlic and thyme, then pour in the vegetable broth.
  5. Bring to a gentle simmer and cook for 20 minutes.
  6. Add chopped kale, salt, and black pepper, cook for another 5 to 7 minutes.
  7. Ladle into bowls and serve warm.
