Description

A golden roasted chicken infused with bright lemon and fresh herbs, delivering juicy, tender meat with crispy skin and rich, comforting flavors.


Ingredients

  • 1 whole chicken (1.5 to 2 kg)
  • 2 whole lemons, sliced
  • 3 tablespoons olive oil
  • 4 garlic cloves, smashed
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat oven to 200°C.
  2. In a bowl, combine olive oil, salt, black pepper, garlic, and chopped parsley.
  3. Pat the chicken dry and place it in a roasting pan.
  4. Rub the mixture all over the chicken and under the skin. Place lemon slices and herb sprigs inside and around the chicken.
  5. Roast for 1 hour and 20 minutes, basting occasionally, until golden and fully cooked.
  6. Remove from oven and let rest for 10 minutes.
  7. Carve, serve, and enjoy.
