- 1 whole chicken (1.5 to 2 kg)
- 2 whole lemons, sliced
- 3 tablespoons olive oil
- 4 garlic cloves, smashed
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Preheat oven to 200°C.
- In a bowl, combine olive oil, salt, black pepper, garlic, and chopped parsley.
- Pat the chicken dry and place it in a roasting pan.
- Rub the mixture all over the chicken and under the skin. Place lemon slices and herb sprigs inside and around the chicken.
- Roast for 1 hour and 20 minutes, basting occasionally, until golden and fully cooked.
- Remove from oven and let rest for 10 minutes.
- Carve, serve, and enjoy.
