Description

A cozy and lighter twist on classic lasagna made with tender zucchini slices, savory ground turkey, creamy ricotta, rich marinara sauce, and layers of melted mozzarella cheese.


Ingredients

  • 4 medium zucchini, sliced lengthwise
  • 1 pound lean ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13 baking dish.
  2. In a bowl, combine ricotta cheese, egg, parmesan cheese, half the parsley, salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened. Stir in garlic and ground turkey, cooking until browned completely.
  4. Add marinara sauce to the skillet and simmer for 10 minutes.
  5. Pat zucchini slices dry thoroughly using paper towels.
  6. Spread a thin layer of sauce in the baking dish. Add a layer of zucchini slices, followed by ricotta mixture, turkey sauce, and mozzarella cheese.
  7. Repeat layers until all ingredients are used, finishing with mozzarella and parmesan cheese on top.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for another 15 minutes until bubbly and golden.
  10. Let rest for 10 minutes before slicing and garnish with remaining parsley before serving.

Notes

  • Salt the zucchini slices before assembling to reduce excess moisture.
  • Freshly shredded mozzarella melts more smoothly and gives better texture.
  • Allow the lasagna to rest before slicing so the layers hold together properly.
  • Store leftovers in the refrigerator for up to 4 days.
