A cozy and lighter twist on classic lasagna made with tender zucchini slices, savory ground turkey, creamy ricotta, rich marinara sauce, and layers of melted mozzarella cheese.

- 4 medium zucchini, sliced lengthwise
- 1 pound lean ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 cups marinara sauce
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 large egg
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 375°F and lightly grease a 9×13 baking dish.
- In a bowl, combine ricotta cheese, egg, parmesan cheese, half the parsley, salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened. Stir in garlic and ground turkey, cooking until browned completely.
- Add marinara sauce to the skillet and simmer for 10 minutes.
- Pat zucchini slices dry thoroughly using paper towels.
- Spread a thin layer of sauce in the baking dish. Add a layer of zucchini slices, followed by ricotta mixture, turkey sauce, and mozzarella cheese.
- Repeat layers until all ingredients are used, finishing with mozzarella and parmesan cheese on top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 15 minutes until bubbly and golden.
- Let rest for 10 minutes before slicing and garnish with remaining parsley before serving.
Notes
- Salt the zucchini slices before assembling to reduce excess moisture.
- Freshly shredded mozzarella melts more smoothly and gives better texture.
- Allow the lasagna to rest before slicing so the layers hold together properly.
- Store leftovers in the refrigerator for up to 4 days.
