Description

Tender grilled calamari stuffed with a savory mixture of shrimp, herbs, breadcrumbs, and parmesan cheese, finished with a bright lemon herb dressing for a fresh Mediterranean-inspired seafood dish.


Ingredients

  • 8 medium cleaned calamari tubes
  • 1 cup plain breadcrumbs
  • 1/2 cup finely chopped raw shrimp
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon chopped fresh oregano
  • 1/4 cup grated parmesan cheese
  • 5 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat an outdoor grill or grill pan over medium-high heat and lightly oil the grates.
  2. In a large bowl, combine breadcrumbs, chopped shrimp, garlic, parsley, oregano, parmesan cheese, 2 tablespoons olive oil, lemon zest, salt, black pepper, and red pepper flakes.
  3. Pat the calamari tubes dry with paper towels and brush lightly with olive oil.
  4. Spoon the stuffing gently into each calamari tube, filling about three-quarters full. Secure openings with toothpicks if needed.
  5. Grill the stuffed calamari for 3 to 4 minutes per side until lightly charred and opaque.
  6. Whisk together the remaining olive oil and lemon juice to create the dressing.
  7. Drizzle the lemon herb dressing over the grilled calamari and garnish with additional parsley and lemon slices before serving.

Notes

  • Do not overcook the calamari or it may become rubbery.
  • Fresh lemon juice gives the dressing the best flavor.
  • The stuffing can be prepared one day ahead and refrigerated.
  • Serve immediately for the best texture and flavor.
