- 8 medium cleaned calamari tubes
- 1 cup plain breadcrumbs
- 1/2 cup finely chopped raw shrimp
- 4 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tablespoon chopped fresh oregano
- 1/4 cup grated parmesan cheese
- 5 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
Instructions
- Preheat an outdoor grill or grill pan over medium-high heat and lightly oil the grates.
- In a large bowl, combine breadcrumbs, chopped shrimp, garlic, parsley, oregano, parmesan cheese, 2 tablespoons olive oil, lemon zest, salt, black pepper, and red pepper flakes.
- Pat the calamari tubes dry with paper towels and brush lightly with olive oil.
- Spoon the stuffing gently into each calamari tube, filling about three-quarters full. Secure openings with toothpicks if needed.
- Grill the stuffed calamari for 3 to 4 minutes per side until lightly charred and opaque.
- Whisk together the remaining olive oil and lemon juice to create the dressing.
- Drizzle the lemon herb dressing over the grilled calamari and garnish with additional parsley and lemon slices before serving.
Notes
- Do not overcook the calamari or it may become rubbery.
- Fresh lemon juice gives the dressing the best flavor.
- The stuffing can be prepared one day ahead and refrigerated.
- Serve immediately for the best texture and flavor.
