- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 cups broccoli florets
- 2 medium carrots, thinly sliced
- 1 medium zucchini, sliced into half moons
- 1 cup cherry tomatoes, halved
- 1 cup frozen sweet peas
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large deep pot over medium heat and add olive oil and minced garlic. Stir for about 30 seconds until fragrant.
- Add broccoli florets, sliced carrots, and zucchini. Cook for 4 to 5 minutes until slightly tender.
- Stir in penne pasta, cherry tomatoes, sweet peas, vegetable broth, Italian seasoning, salt, and black pepper.
- Bring everything to a gentle boil, then reduce heat and simmer for 12 to 14 minutes, stirring occasionally, until the pasta is tender and most of the liquid has reduced.
- Lower the heat and stir in heavy cream and freshly grated parmesan cheese until smooth and creamy.
- Sprinkle chopped fresh parsley over the pasta before serving.
- Serve hot with extra parmesan cheese if desired.
