Description

A creamy and colorful one-pot pasta loaded with fresh vegetables, parmesan cheese, and tender penne pasta. This easy comfort meal comes together in a single pot for a satisfying dinner with minimal cleanup.

  • 12 ounces penne pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups broccoli florets
  • 2 medium carrots, thinly sliced
  • 1 medium zucchini, sliced into half moons
  • 1 cup cherry tomatoes, halved
  • 1 cup frozen sweet peas
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat a large deep pot over medium heat and add olive oil and minced garlic. Stir for about 30 seconds until fragrant.
  2. Add broccoli florets, sliced carrots, and zucchini. Cook for 4 to 5 minutes until slightly tender.
  3. Stir in penne pasta, cherry tomatoes, sweet peas, vegetable broth, Italian seasoning, salt, and black pepper.
  4. Bring everything to a gentle boil, then reduce heat and simmer for 12 to 14 minutes, stirring occasionally, until the pasta is tender and most of the liquid has reduced.
  5. Lower the heat and stir in heavy cream and freshly grated parmesan cheese until smooth and creamy.
  6. Sprinkle chopped fresh parsley over the pasta before serving.
  7. Serve hot with extra parmesan cheese if desired.

Notes

  • Freshly grated parmesan melts more smoothly than pre-shredded cheese.
  • Add a splash of vegetable broth when reheating leftovers to keep the sauce creamy.
  • You can swap vegetables based on the season or what you already have at home.
  • Do not overcook the vegetables if you want them to stay vibrant and slightly crisp.
