- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 5 large eggs
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 24 ounces cream cheese, softened
- 2 cups fresh strawberries, sliced
- 1/2 cup strawberry jam
- 1/2 cup heavy cream
- 1 tablespoon cornstarch
Instructions
- Preheat oven to 325°F and grease a 9 inch springform pan.
- In a bowl, mix melted butter, cocoa powder, 1 cup sugar, 2 eggs, vanilla extract, flour, and salt until smooth.
- Spread brownie batter evenly into the prepared pan.
- In another bowl, beat cream cheese with remaining sugar until creamy.
- Add remaining eggs, heavy cream, cornstarch, and vanilla extract. Mix until smooth.
- Pour cheesecake filling over brownie layer.
- Swirl spoonfuls of strawberry jam into the cheesecake layer.
- Bake for 55 to 65 minutes until center is slightly jiggly.
- Cool completely, then refrigerate for at least 4 hours.
- Top with sliced strawberries and remaining strawberry jam before serving.
