Description

Tender Turkish stuffed onions filled with seasoned rice, ground beef, herbs, and warm spices, slowly baked in a rich tomato sauce until perfectly soft and comforting.


Ingredients

  • 6 large yellow onions
  • 1 pound lean ground beef
  • 1 cup uncooked short grain rice
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons salt
  • 2 cups tomato sauce
  • 1 cup water or broth
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat oven to 375°F and lightly grease a baking dish or Dutch oven.
  2. In a large bowl, combine ground beef, rice, tomato paste, olive oil, garlic, parsley, paprika, cumin, black pepper, and salt.
  3. Bring a large pot of water to a boil. Peel onions and trim ends slightly. Boil onions for 10 minutes until softened enough to separate into layers.
  4. Fill each onion layer with the meat and rice mixture and wrap gently.
  5. Arrange stuffed onions tightly in the baking dish.
  6. Pour tomato sauce and broth around the onions.
  7. Cover tightly and bake for 50 minutes.
  8. Remove cover and continue baking for 20 minutes until tender and lightly caramelized.
  9. Drizzle lemon juice over the top before serving.

Notes

  • Do not overfill the onions because the rice expands while cooking.
  • Use broth instead of water for deeper flavor.
  • Let the dish rest for 10 minutes before serving.
  • Serve with yogurt or warm flatbread for a traditional touch.
