Description
Tender Turkish stuffed onions filled with seasoned rice, ground beef, herbs, and warm spices, slowly baked in a rich tomato sauce until perfectly soft and comforting.

- 6 large yellow onions
- 1 pound lean ground beef
- 1 cup uncooked short grain rice
- 2 tablespoons tomato paste
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons salt
- 2 cups tomato sauce
- 1 cup water or broth
- 1 tablespoon fresh lemon juice
Instructions
- Preheat oven to 375°F and lightly grease a baking dish or Dutch oven.
- In a large bowl, combine ground beef, rice, tomato paste, olive oil, garlic, parsley, paprika, cumin, black pepper, and salt.
- Bring a large pot of water to a boil. Peel onions and trim ends slightly. Boil onions for 10 minutes until softened enough to separate into layers.
- Fill each onion layer with the meat and rice mixture and wrap gently.
- Arrange stuffed onions tightly in the baking dish.
- Pour tomato sauce and broth around the onions.
- Cover tightly and bake for 50 minutes.
- Remove cover and continue baking for 20 minutes until tender and lightly caramelized.
- Drizzle lemon juice over the top before serving.
Notes
- Do not overfill the onions because the rice expands while cooking.
- Use broth instead of water for deeper flavor.
- Let the dish rest for 10 minutes before serving.
- Serve with yogurt or warm flatbread for a traditional touch.
